Night before last, I made my very first batch of homemade cheese--mozzarella. All three of us, Chuck , Gillian, and I loved the cheese. We grated it onto spaghetti with homemade sauce (including tomatoes and tomato sauce my mom and I canned last autumn). Now Gillian asks for "a pile of homemade cheese" on her noodles. I was inspired to try this while reading Barbara Kingsolver's book Animal, Vegetable, Miracle and sent off for a cheesemaking kit last summer. As you immediately noticed, it took me a loooong time to actually try making cheese. But now that I've done it, and yes, it was very easy and pretty quick (you use your microwave!), I'll be making more mozzarella and trying to make other kinds of cheese. Very, very cool that I can do this! I absolutely love cheese. Remember those funny 1990s tv commercials from some cheese council that extolled "Behold the power of cheese!"?
